Merry Gluten-Free Christmas! Oma’s Chocolate Chip Meringue Cookies

I always knew it was Christmas when my Oma (German for grandmother) would walk through the door, a plastic bag full of her famous chocolate chip meringue cookies in hand. Us kids would sneak these cookies throughout the afternoon, eating handfuls of them like popcorn! These cookies are so light and so addicting!  What makes my Oma’s meringues extra special are the added bonusGluten-free meringue cookies with chocolate chips of mini chocolate chips sprinkled throughout-a sweet surprise in every bite!

 

I have since tried to replicate my Oma’s tradition of making these cookies every Christmas. Meringues make for the perfect Christmas gift for colleagues and friends-just package in a pretty holiday tin and give the gift of gluten-free deliciousness!

What are Meringues?

Meringues arGluten-free meringue cookies with chocolate chipse like biting into a sweet cloud. Not that I’ve tasted cloud before, but if I could I’m sure it would taste like a meringue! Made of the simplest of ingredients (egg whites, sugar, vanilla and cream of tartar), these airy cookies are so light and elegant and perfect for any occasion.  Filled with air (from beating the egg whites) meringues are extremely light and have a delicate, crunchy and perfectly sweet exterior. The best part of meringue cookies: they require no flour and are naturally gluten-free! Meringues are arguably the easiest and most delicious gluten-free cookie ever!

Where are Meringues from?

After leafing through cookbooks and digging around the internet I was very surprised to learn that no one can agree on where meringues originate from (though I would argue that they originate from my Oma!). If nothing else, it seems that everyone agrees on two things:

  1. Meringues were first made somewhere in Europe
  2. They are old-like, 1600’s old

While many credit these airy cookies to France (they are widely popular in French  pâtisseries (bakeries) to be sure),  their creator may have actually been Swiss, Polish or even British.

Chocolate Chip Meringue Cookies

Naturally gluten-free, light and airy meringue cookies get a sweet surprise with a touch of chocolate chips

Ingredients
  • 3 egg whites (from large or XL eggs)
  • 1 cup of sugar (not exact-a little less than a cup)
  • ¼ tsp cream of tartar
  • 1 tsp vanilla
  • ½ bag of semi-sweet, mini chocolate chips (or to taste)
Instructions
  1. Preheat the oven to 300 F
  2. In a mixing bowl, beat the egg whites on medium-high speed until fluffy (about 2 minutes)
  3. Gradually beat in the sugar and cream of tartar and continue to mix until stiff peaks form
  4. With a spoon, gently fold in the vanilla and chocolate chips
  5. Spoon dollops (about 1 TBS) of batter onto a cookie sheet lined with parchment paper. If any of the cookies have sharp peaks, dip your finger in water and gently pat down.
  6. Bake in the oven for 25-30 minutes until slightly browned.
  7. Allow to cool for a few minutes on the baking sheet and then transfer to a cookie rack to cool completely
  8. Once cooled, can be stored in a cookie tin for up to a week

*Chocolate chips can be added according to your taste and how much chocolate you want per cookie
