Happy Gluten-Free Valentine’s Day: Cherry Chocolate Chip Meringues

My husband loves all things cherry. In fact, he even named his pet dachshund in India Cherry. With his love of cherry in mind I was struck by an idea while making my grandmother’s famous chocolate chip meringue cookies this past Christmas.

Instead of just adding chocolate chips to the meringues, wouldn’t it be a fun and fruity surprise to sneak in some dried cherries? Armed with my mixer and egg whites I decided to experiment. The results were everything I had hoped for and more!

Despite adding the jam and cherries the meringues remain amazingly light and airy. The tartness of the dried cherries serves as a nice contrast  to the chocolate chips. Drops of food color add an air of fun to the traditional white meringues and hint at the cherry surprise inside. What’s more, you all know I love meringues because they are wonderfully gluten-free and require no flour!

So whatever the occasion-be it  Valentine’s Day or not a holiday at all-these cherry chocolate chip meringues are the perfect way to surprise your gluten-free loved ones!

Cherry Chocolate Chip Meringue Cookies

Light and airy with just a hint of cherry, these delicate pink chocolate chip meringue cookies are a great gift for loved ones any time of the year!

Ingredients
  • 3 large eggs
  • ¼ tsp cream of tartar
  • 1 cup of sugar (a tad less)
  • 1 tsp vanilla
  • ½ cup chopped, dried cherries
  • 2 TBS cherry jam
  • 1 tsp red food color
  • semi-sweet mini chocolate chips (about ¼ cup or to taste)
  • parchment paper
Instructions
  1. Preheat the oven to 300 F
  2. Separate the egg whites and beat with an electric mixer until fluffy
  3. Once the egg whites are fluffy, slowly add the sugar and cream of tartar and continue to beat with the mixer until stiff peaks form
  4. With a spoon, gently fold in the vanilla, jam and red food color
  5. Gently fold in the chopped cherries and chocolate chips
  6. On a cookie sheet lined with parchment paper, spoon on rounds of dough-about 1 TBS each
  7. Bake for 30 min
  8. Remove from oven and let cool. Transfer to cookie racks to cool completely
  9. Enjoy!
Notes
Before you bake your meringues, if you notice any of the shaped cookies have sharp peaks or points you can gently press them down with your finger (wet by water first)
